Is it hard to get in the Michelin Guide? ›

Michelin stars are given out on a scale of one to three stars, with only the top establishments in the world qualifying. To earn one Michelin star, a restaurant needs to be “a very good restaurant in this category”. For two stars, it needs to be “excellent cooking, worth a detour”.

Transition to digital publication

2021 marked the end of printed copies of the Michelin Guide. After 121 years, Michelin transitioned to digital publication and released a proprietary app.

Many Michelin restaurants include the service charge in the bill. If not, a 5-10% tip is perfectly acceptable.

Restaurants lose Michelin stars when they fail to maintain the required high food quality standards, service, or dining experience. If you think once a restaurant is a Michelin star, it's always a star, you're mistaken.

While MICHELIN stars specifically rate the quality of a restaurant's food, the MICHELIN Recommended designation more broadly covers entire cities and countries to highlight local dining establishments. These fall under the brand, MICHELIN Guide, along with Bib Gourmands (more on that shortly).

Gordon Ramsay at the London, the flagship restaurant of renowned chef Gordon Ramsay located in a luxurious Manhattan hotel, was stripped of its two Michelin stars in 2013.

To date, Gordon Ramsay holds a total of 8 Michelin stars across the restaurants worldwide, including the flagship, Restaurant Gordon Ramsay, which has held three Michelin stars for more than 22 years. Michelin Guide newcomer, Restaurant 1890 was awarded its first star in February 2024.

But only since 2019, when Visit California paid Michelin $600,000, have top restaurants in Los Angeles and elsewhere in the state earned stars. So while it is still true that individual restaurants can't buy stars, tourism boards and hotel owners can buy the possibility.

Barrafina Dean Street, Leroy in Shoreditch, Hakkasan Hanway Place and Hakkasan Mayfair in London have lost their stars in the Michelin Guide Great Britain and Ireland 2024.

The collection crossed the Atlantic in 2006, awarding stars to 39 restaurants in New York. In 2007 and 2008, the guide moved on to San Francisco, Los Angeles and Las Vegas, and in 2011 it was turn of Chicago to have its own Michelin guide.

For over a century, MICHELIN stars have signified excellence in cooking and become one of the most prestigious international hallmarks in the restaurant industry. MICHELIN stars are awarded solely on the quality and technique of the food and wines served by anonymous inspectors.

One star indicates a very good restaurant in its category, with high-quality ingredients cooked exceptionally. Making the MICHELIN Guide itself is considered a big achievement. Two stars represent excellent cuisine worth making a detour for, using imaginatively crafted plates reflecting mastery of technique.

“A restaurant in the Recommended selection is the sign of a chef using quality ingredients that are well cooked; simply a good meal,” says Michael Ellis, International Director of the MICHELIN Guide books. “It means that the inspectors have found the food to be above average, but not quite at star or Bib level.”

Becoming a Michelin star chef takes dedication, extensive training and craftsmanship. Like world-renowned chefs who are highly decorated, you'll need to complete a thorough culinary education, learn a range of cooking techniques and acquire experience in fine dining, menu creation and presentation skills.
